When you eat primal, people get confused. Oh you’re losing weight, what are you eating? Jalapenos stuffed with chorizo and wrapped in bacon. Confusion sets in. Tofu chorizo? Turkey bacon? Nope ūüôā

Quick breakfast update

Bam. 3 eggs, casual gourmet chicken sausage with red peppers, and spinach. With a side of 1/2 a nectarine and avocado.  The red pepper in the sausage really flavors the eggs quite well and add a lot of flavor.

Going out tonight, gonna have a steak.

Beer, my downfall

I do my best, but I love beer. ¬†I am not a Bud Light, or other type of “lifestyle” beer drinker. ¬†I love hops. ¬†I like a beer that tastes like you should be chewing it. ¬†I am a big fan of IPA beers of all shapes and sizes and am always looking for something new. ¬†The most recent pick-up I have is Ballast Point Big Eye IPA. ¬†I happened to be at Fresh & Easy the other day and it was on sale so I picked some up and I am a fan. ¬†I also saw that Samuel Adams has out their Octoberfest Lager which, while not an IPA, is still rather delicious.

We entertained some family over the weekend, so I drank more than usual and I ate some food that I wouldn’t normally eat on my new lifestyle (ice cream) and so I am not surprised that the scale hasn’t really moved as much as I would have liked (2.5 lbs over the last 10 days). ¬†But yesterday I was back on the horse. ¬†Good food all day long as I fought a cold.

Gonna try something new today; fresh salmon cakes. (partial credit to the prudent wife)

2 lbs salmon

3 eggs (beaten)

2 tbsp lemon juice

1 tsp mustard

Salt

Pepper

1/4 cup almonds (ground up like I used for my meatballs)

1 tbsp of olive oil for lubrication in the pan

Grind up almonds until they are not quite flour, but close to breadcrumbs in size. ¬†Add all ingredients (except olive oil) to food processor and pulse until you have a nice chunky well mixed texture. ¬†Form patties appox 4 oz a piece. ¬†Heat olive oil over medium heat in skillet and add patties. ¬†Cook 3-5 minutes a side until a nice light brown crust forms. ¬†I’m having mine with some baked sweet potato fries and squash and a salad (likely with some avocado on it). ¬†Once I get done with them I will update with my nutritional information. ¬†In the recipe that I based this on canned fish is used. ¬†I happened to find some fresh salmon on sale, so I’ll be using that. ¬†I’ll try not to have a beer with it, but no promises.

With grilled peaches, squash, avocado and a salad of mixed greens and spinach.

Update: they are kind of plain tasting, which is good if you don’t care for fish. Gonna add some cayenne pepper.
166cal/2 carbs/8 fat/12 protein.

 

I also stumbled along this for making energy bars, and they are great!  Made up a batch and they are good to have around for the kids.

Sorry for a lack of updates¬† Been plugging away on this primal eating. Yesterday I had a couple of beers (not primal) and snacked a bit more than I should have.¬† I snacked on primal foods, but probably too many if them. Didn’t check my weight, but knew I was wrong.

Anyhow, here is breakfast. Chicken and apple sausage, grapes and a hard boiled egg. Now a cup of coffee from Starbucks. Cafe Americano, nothing in it.

Not sure what’s for dinner, never cooked this much in my life.¬†

Case of the Mondays/Primal Meatballs and Sauce

Woke up this morning feeling like p Diddy, ok not really.¬† Woke up this morning and went in a two mile run. I’m beginning to wonder if I ever will not get out of breath when running. Oh well.

Tonight I am making turkey meatball subs. No sub for me, but plenty of meatballs and sauce. Trying primal variations on a recipe I used before for meatballs, gonna use ground almonds in place of bread crumbs.¬† Gonna make the sauce myself. If it’s good, I’ll post the recipe.

Later today is also a p90x lifting day for me, chest and back.

 

Ok, so I made the turkey meatballs with from scratch tomato sauce (mostly).  This is a primal friendly recipe so if you are looking for one, here it is:

2 lbs lean turkey meat

6 garlic cloves (you can substitute garlic powder in a pinch)

1/2 a white onion

1 tsp salt

1 tsp pepper

1 tsp oregano

2 large eggs (beaten)

1/2 cup of ground almonds (not quite the consistency of almond flour, but not too big of chunks, these are replacing bread crumbs so they should be about the same size.

1 tbsp extra virgin olive oil

Pre-heat oven to 375.

Put a pan on the stove top coat with 1 tablespoon of extra virgin olive oil.

Mix all ingredients in a bowl.  Form 41 1 oz meatballs.  Put them in the pan with the oil about 12 at a time.  Turn after 3 minutes or so.  Take the meatballs and put them on a non greased cookie sheet.

Once you have all of them on a cookie sheet cook for appox 20 minutes at 375.  After 20 minutes ensure that they are the proper internal temperature for turkey meat with a meat thermometer.  Easy

Sauce

1 large can of diced tomatoes (you can also use fresh tomatoes diced if you have them available)

1/2 a large white onion

2 garlic cloves (or garlic powder if you desire)

2 tablespoons of tomato paste

1/4 tsp of salt

1/4 pepper

basil to taste

Heat olive oil in a pan.  Add tomatoes (do not drain off liquid).  Add all ingredients.  Cook on medium heat covered until it reduces to a thick sauce.  You may want to add more salt or garlic or basil to taste.

Nutritional information:

Meatballs: Each 58 cal/1 carb/4g of fat/5 grams protein

Sauce: 1/6 of total 58 calories/7 carbs/2 fat/2 grams protein

Tastes great to me.

My first attempt at a primal recipe

tonight I am trying a made up recipe. chicken thighs, marinated in olive oil, red wine vinegar, ground chili pepper, garlic powder, pepper, ground oregano, and paprika. We’ll see how it tastes. Cooking some sweet potato fries with oil and salt.¬†

Well it came out very nice looking but also very bland. I over cooked the skin when I was searing it at the end, but I think the oil and vinegar took the taste away. I think next time I will try just the spices as a rub.
